The aromatic bouquet of Nebbiolo evolves remarkably over time. In its youth, you can perceive floral notes of wilted rose and violet, combined with fruity hints of cherry and raspberry. With aging and refinement, complex and captivating tertiary aromas develop, such as licorice, pepper, cinnamon, tobacco, leather, and balsamic notes.

Given its intense profile, Nebbiolo calls for pairings with dishes of equal structure and flavor, such as red meats, game, mushrooms, and truffles. It also pairs excellently with aged cheeses.
